Chicken in Bianco
Simple but tasty, this dish is great accompanied by white
rice.
2 tablespoons extra-virgin
olive oil
2 large white onions, finely
chopped
1 tablespoon coriander seeds
2 tablespoons dried red chili
pepper, seeds removed
1 pound chicken breast,
cubed
1 tablespoon balsamic vinegar
salt and freshly ground pepper
1 cup whole yogurt
In a large nonstick skillet over medium heat, warm the
olive oil. Add the onions, coriander and chili pepper and
cook for 7 minutes. Add the chicken and vinegar and stir.
Raise the heat to medium-high and cook for 2 to 3 minutes.
Season with salt and pepper and add 3 to 4 tablespoons
of hot water. Reduce the heat to medium and add
the yogurt. Cook for another 5 to 6 minutes, stirring frequently
until the chicken is cooked through and a smooth
sauce forms.
