Garden Fresh Couscous
A unique dish that fights against melancholy and depression.
3?4 pound couscous, or substitute
Basmati rice
salt
1?2 pound fava beans, peeled,
or substitute frozen
1?3 pound baby carrots,
chopped
1?4 cup parsley, chopped
3 tablespoons sunflower
seeds, shelled
freshly ground pepper
6 tablespoons extra-virgin
olive oil
Cook the couscous by following the directions provided
on the package. Bring a pot of water to a boil. Add salt
and the fava beans and cook until the favas turn white.
Remove from the heat and drain. Rinse the favas with
cold water and allow them to drip dry.
In a bowl, combine the couscous with the vegetables,
parsley and sunflower seeds, then season with
salt and pepper.
In a large, deep skillet over medium-high heat, warm
the olive oil. Add the couscous mixture and warm for 1
to 2 minutes. Remove from the heat and serve.
Serves 4
