The Parco Fiorito Cooking School began in 1993, when the Chef Roberto Russo transferred from Naples.
Chef Roberto Russo speaks fluent English and shares countless experiences in the United States and Canada. He is passionate and enthusiastic of the territory's history of cuisine and culinary traditions...
Thanks to his passion and knowledge, he can convey with ease history, origin of, and information concerning foods, and their use in preparing the menu of the day.
Today has the collaboration of his daughter Claudia who is distinguished by a strong passion for cooking and for having achieved the second level of Sommelier.
The course starts by visiting the garden. Here participants collect, together with the chef, herbs, lettuce, tomatoes, courgettes, aubergines or other seasonal vegetables needed for the preparation of their dishes.
Participants will prepare, under the Chef's guidance, the whole menu to be enjoyed at the end of the lesson.
Everyone will be capable, at the end of the course, of preparing at home dishes thanks to skills acquired.
It is worth remembering that U.N.E.S.C.O. elected World Heritage Perugia territory and for this reason Relais Parco Fiorito is MIRABILIA project-partner (A network committed to the promotion of unexpected places of historical, cultural and environmental importance in the UNESCO World Heritage Sites)
Our school's aim, is not only learning secrets of our cuisine, but it also serves as an opportunity to come closer to nature, spending moments in an atmosphere of conviviality, but in a setting where cuisine, nature and history "sit at the same table".
Upon request we can do Vegetarian Cuisine
The cooking class starts at either 10 AM with lunch included or 4 pm with dinner included and is prepared in the complete Tuscan-Umbrian Tradition.
If you are coming from Florence for a day trip, we will organize your transfer from the train. We are only 10 minutes away from Terontola-Cortona train station!!
